    Now I instruct with the Audi Quattro Club.
    I know you would need to have a roll bar to get on track with a convertable like an s2000. Try contacting the Friday At The Track people up at Summit Point and see if they might know someone who would rent you a car to use. If you just want a good experience on car control and vehicle dynamics, try their karting "arrive and drive" program. It will give you a good overview of the basics that can be applied towards any vehicle.
